In the season we should all be beachside it seems we are all bedside instead. Almost every person I know has come up sick or getting over sickness in the past week. And had I known I was going to fall ill in the last week I would have used up my last bit of energy to make a batch of my favorite tomato bisque to hold me over.
Now that I'm feeling somewhat like a human again I'm thrilled to share this recipe for creamy vegan tomato bisque that will not only warm you up but also nourish your body.

Ingredients:
6-8 large ripe tomatoes, quartered
1 large onion, roughly chopped
1 whole garlic
2 tablespoons olive oil
1 can (14 ounces) coconut milk
1 cup vegetable broth
1 can of tomato paste
1 tablespoon fresh thyme leaves
1 teaspoon smoked paprika
Salt and pepper to taste
garlic and onion salt to taste
Thyme
Fresh parsley leaves for garnish
Instructions:
Preheat your oven to 400°F (200°C). Place the quartered tomatoes, chopped onion, and garlic cut in half (placed in center) on a baking sheet. Drizzle them with olive oil and season with salt and pepper, thyme, garlic and onion salt. Roast the vegetables for about 30 minutes or until they are tender and slightly caramelized.
Transfer the roasted tomatoes, onion, and garlic to a blender. Add the vegetable broth and tomato paste mix until smooth and velvety.
Pour the blended mixture into a large pot and bring it to a gentle simmer over medium heat.
Once simmered add in coconut milk and stir until mostly dissolved. Allow the bisque to cook for about 10 minutes, stirring occasionally to ensure it heats evenly.
Season with salt, pepper, garlic and onion salt and thyme according to your taste preferences. If you desire a thinner consistency, add more vegetable broth or coconut milk.
Once the bisque is heated through and seasoned to your liking, remove it from the heat. Ladle it into bowls and garnish with fresh parsley leaves.
