Vegan Vanilla Olive Oil Cake

I've had "make and olive oil cake" on my baking to do list for a while now. It's shame to not have tried this sooner because the results were amazing! So today, we're sharing a decadent Vegan Vanilla Olive Oil Cake recipe that not only satisfies your taste buds but holds down the plant-based foodies. And because most of the recipes out there are heavy on the lemony taste, we've work out the kinks so it taste just like vanilla pound cake!

Ingredients:

  • ½ cup olive oil

  • 2 cups (280g) all-purpose flour

  • ¾ cup (75g) almond flour

  • 3 teaspoons baking powder

  • ½ teaspoon baking soda

  • Pinch of salt

  • 1 ½ cups oat milk milk

  • 1 tablespoons lemon juice (I don't like lemon flavored cake so the tiniest bit will suffice )

  • ¾ cup sugar

  • 1 teaspoon vanilla extract

  • Powdered sugar

  • Assorted berries *optional


Instructions:


  1. Preheat and Prepare: Preheat your oven to 350°F Grease a cake pan with olive oil and dust it with flour for a flawless release.

  2. Create Buttermilk Substitute: In a bowl, combine oat milk and lemon juice. Let it sit for a few minutes to curdle and create a vegan buttermilk substitute.

  3. Wet Ingredients: In a separate bowl, whisk together sugar, olive oil, and vanilla extract until the mixture becomes light and fluffy. This step ensures a moist and rich texture for your cake.

  4. Dry Ingredients: In another bowl, sift together all-purpose flour, almond flour, baking powder, baking soda, and a pinch of salt.

  5. Mix and Fold: Gradually incorporate the dry ingredients into the wet ingredients, alternating with the oat milk mixture. Gently fold the ingredients until just combined. Be cautious not to overmix (too thin) to maintain the cake's spongy texture.

  6. Bake to Perfection: Pour the batter into the cake pan and place in the oven. Bake for 35-40 minutes or until a toothpick inserted comes out clean. A golden-brown top is another good sign.

  7. Cool: Allow the cake to cool in the pan for 20-30 minutes before transferring it to a cake dish

  8. Garnish + Serve: Once cooled, you can dust it with powdered sugar or add top with berries of your choice for a special touch.
