The thought of eating anything made on a stove in the heat we are experiencing this summer sounds like torture. I myself live in the valley here in California so the weather has been no joke! To cope I've been sticking to my classic summer salad and a drink I recently fell in love with -- if you caught the live I hosted on MUA Brunch LA's Instagram then you've seen me make this drink by now! And in an effort to start dropping more recipes I thought I'd start with this cool combo!
VI'S SUMMER SALAD RECIPE
PREP TIME: 10 minutes COOK TIME: 0 minutes TOTAL TIME: 10
INGREDIENTS:
- Baby Spinach + Mixed Greens
- Shredded Purple Cabbage
- Red (purple) Onion
- 1/2 of a Red Pepper + 1/2 of Green Bell Pepper (if you bowl is small quarter amount of each will do)
- 3-4 Strawberries
- Any Caesar, Blue Cheese, Balsamic dressing of your choice. I use Daiya Creamy Caesar Dressing b/c it's vegan and taste like the real thing!
INSTRUCTIONS:
Fill bowl with spinach and greens
Add a hand full of shredded cabbage
Add a handful of thinly sliced red onion.
Add in sliced and chopped bell pepper
Add in chopped up strawberries
Mix together -- I like to put a plate on top of the bowl and shake
Add your dressing and enjoy!
VI'S STRAWBERRY BASIL ALE
PREP TIME: 10 minutes COOK TIME: 0 minutes TOTAL TIME: 10
INGREDIENTS:
- 1-2 Basil leaves
- 3-4 Strawberries
- Honey
- 1/2 a lime
- Crushed Ice
- Ginger Ale
INSTRUCTIONS:
Crush strawberries until it looks like a jelly
Add in cut up basil leaves (ripping them into pieces works too)
Add in a few swirls of honey
STIR!
Fill cup with crush ice to your liking
Add Ginger ale so it fills up the cup
Squeeze in the lime juice (fresh lime juice is key to activating all of the flavors!)
Stir with a straw (that we hope is reusable) + ENJOY!
