One of the more challenging parts of transitioning into veganism has been giving up my favorite foods. Giving up cheese to be specific! After trying just about every cheese alternative up and down the Los Angeles area I just gave up the idea enjoying things like pizza and nachos.
But I recently stumbled onto this amazing plant-based queso that has given me some hope! I spent the entire weekend enjoying this guilt-free snack and felt it would be selfish not to share the recipe!
PREP TIME: 3 minutes COOK TIME: 7 minutes TOTAL TIME:10 minutes
INGREDIENTS:
– Siete Mild Nacho Cashew Queso (order online or find at your local Whole Foods)
– Plant-based Vegan Crumbles (Morning Star or Gardein)
– Tortilla chips (yellow corn tortilla chips are key) – Handful of finely chopped onions
– Handful of finely chopped scallions (green onions)
– 1 can of black olives
– 1 avocado
– Pinch of salt
– Cumin (to taste)
– Olive oil
*All toppings are optional and should be added to your preference.
INSTRUCTIONS:
Coat non-stick skillet with olive oil.
Add plant based crumbles to pan over medium heat, stirring occasionally, until beef is defrosted.
Add cumin, salt, and chopped onions and cook until "meat" is a deep brown and remove from heat.
Add queso to microwavable bowl and warm in microwave for 2 minutes.
Spread tortilla chips into a bowl for serving.
Arrange "meat" on chips, pour queso on top, and add toppings.
